We have amazing seafood.” “You get oysters on the West Coast or the East Coast, everyone has their favorite, but the oysters here in Louisiana, to me, have the best salinity and the best flavor. The shrimp -- we have huge, beautiful shrimp, with clean flavor, not a lot of iodine. Just a great flavor.” “I learned to cook from my grandfather. This was before the days of chefs, but he worked in an institutional kitchen where everything was still made from scratch. I remember being up in the mornings with him making biscuits. He made his own sausage. I was very fortunate to be brought up in that kind of environment.” “Growing up, the holidays would be my biggest food memory.
