Chef Tracy Carter 2024 West Monroe JAC's Craft Smokehouse Tracy Carter is the Owner and Pitmaster at JAC’s Craft Smokehouse, a barbecue fusion restaurant in West Monroe, Louisiana, that features premium smoked meats, homemade sides, chef-driven specials, delicious desserts, and an ambience that often includes live music and a festival-like atmosphere. Tracy was born in Delhi, Louisiana, a few minutes down the road from West Monroe, and grew up traveling all over the world with his military family. Tracy was a Telephone IT Engineer for 20 years, during which time he embarked on his culinary career in 2005 as a sauce and seasoning maker. His products have won him over 42 national and regional awards, including the coveted Golden Chile Pepper awarded by the Zesty Foods Organization’s Zest Fest. In 2017, Tracy launched a food truck business that branched out into new directions from barbecue to Cajun and Creole cuisines. Much of his food truck business was geared toward serving people in need during natural disasters. In 2020, Tracy and his wife, Kristi, made the decision to invest in a brick-and-mortar location to open JAC’s, which was awarded the Best Restaurant Award by the Louisiana Tourism Board of Northeast Louisiana just three years later in 2023. Tracy is honored to be chosen to compete in the Louisiana Seafood Cook Off and can’t wait to work alongside other amazing chefs and restaurateurs.
