Shrimp Gyro Pizza Chef Michael O'Boyle Louisiana shrimp take a little trip to Greece in this fun little recipe perfect for Summer pool parties, or even your fanciest dinner party. This pizza combines the flavors of a classic Greek gyro with the fantastic taste of fresh Louisiana seafood. Ingredients 1 Package Flatbread or Pita Bread Louisiana Shrimp (peeled and deveined) ½ Cucumber peeled and seeded 8 oz Greek Yogurt (strained) 1 Garlic clove 1 tbsp fresh Oregano or 1 teaspoon dried 1 tsp Lemon juice 2 tbsp Olive oil 1 Roma tomato diced and seeded 1 Can sliced black Olives Feta crumbled 1/3 Red Onion thinly sliced Salt and pepper Directions Tzatziki sauce Combine strained yogurt, cucumber, garlic clove, oregano, lemon juice and 1 tablespoon of olive oil in a blender and mix till combined. Add salt and pepper to taste and set aside. Flatbread and Shrimp Preheat oven to 375 degrees and lightly brush bottom of flat bread* with olive oil. Toast in oven for 3-4 minutes until bottom is crispy. Let cool for 5 minutes. While cooling, season shrimp with salt, pepper and 1 tablespoon of olive oil. Grill for 2 minutes per side or until meat is opaque. Take cooled flatbread and spread a layer of tzatzilki sauce on top, much like you would do with tomato sauce for a pizza. Top with crumbled feta, diced tomatoes, sliced olives and grilled shrimp. Put back in the oven for 3-5 minutes or until cheese starts to melt. Once removed scatter thinly sliced red onions on top. *Can substitute Pita bread as well Show off your culinary skills.
